Pollen, Pollen Go Away
It was another beautiful Spring day in Atlanta. Spring is my favorite season so I’m pretty much one happy camper right now…except for my allergies! I have lived in Atlanta my entire life and never once have I suffered from allergies. Cars are beginning to change colors due to the yellowy green layer of pollen coating them. And I’m beginning to sneeze and blow my nose like crazy. Not fun....

Farm Mobile & Frittata
One thing I love about the time change is how late the sun sets. It’s as if I have more time to do things once I get home from work. Tonight we took Moose for a little walk with a fun destination in mind. The Farm Mobile! The Farm Mobile is basically like a CSA, selling organic locally grown produce, free-range eggs, cheese and sustainable meats to name a few. Instead of having customers...

Two Pizza Night
It was a two pizza kind of night. We have lots of good toppings in the house and we were craving multiple flavors. The pizza on the left was our wild one. We topped it with barbecue sauce, red onion, pineapple, a little mozzarella, and feta. The second, more traditional pizza consisted of marinara sauce, onion, green bell pepper, garlic and mozzarella cheese. We popped both suckers in the...

Clare’s Visit
Clare, one of my close friends from college, came in town this weekend to visit us girls that still live here in Atlanta. Not long after her arrival on Friday evening we hit Midtown for a girls dinner out at Einstein’s. From left to right in the below picture: Chloe, Brittany and Clare. I ordered a vegetable plate for dinner that included mushrooms, quinoa-spinach risotto, creamed corn...

Family Room Updates
I previously mentioned that on Thursday night Chris and I did a little house shopping. We have been wanting some sort of coffee table type thing for the middle of the rug. We also wanted a few new lamps for some extra pizazz. Basically we wanted some newness but we also didn’t want to spend too much money. So guess where we went? Target! My favorite store. I didn’t have many good before...

St. Patty’s?
I am going to be totally honest. I completely forgot today was St. Patrick’s Day. That is, until Chris reminded me. Luckily Chris gave me a slice of his intelligence at the last second so that I could put on a green shirt and head on my merry way to work. My meals weren’t exciting at all today. I will start with the most holiday related meal though, lunch. The only reason it’s semi-holiday ...

Cleaning Machines
I have been in an oatmeal mood all week long. Normally I crave a bowl of cereal in the morning but that hasn’t been the case this week. Today I had a bowl of cooked rolled oats and banana with GoLean, fresh strawberries, peanut butter AND dark chocolate peanut butter on top. Talk about decadent. I was running a little behind this morning because I was slow to get my butt going for a run...

Trivia & Teen Mom Tuesday
I don’t know if you have heard, but in our house, Tuesday = Teen Mom. Chris and I watch Teen Mom every week, and Chris especially looks forward to it. Before Teen Mom tonight we skipped our usual workout and decided to go out to dinner and play trivia at Hudson Grille instead. Chris is really good at trivia but tonight didn’t happen to be our night. We still had a good time sipping beer. And...

No Pi For Me
Happy Pi Day! It’s 3.14 and my inner nerd/fun date lover is really enjoying it. Why do I think it’s so cool when the date is interesting? Take for example my good friend Clare, her 21st birthday was 07-07-07! Not only are three 7’s in a row lucky, but 3×7=21 which was the age she was turning! Talk about cool. Today started with some delicious oatmeal. It basically tasted like chocolate...

What A Weekend
Whew, it’s been a busy but fun weekend! Yesterday began with Linda and I creating our own cooking show in her kitchen. I nominated her for the chance to win a kitchen makeover and yesterday we created our applicant video. We put on some fun, girly aprons and cooked french toast with apple compote. Here’s Linda taste testing our final creation! And Chris our lovely videographer and...

Half Marathon #5
I signed up for my 5th half marathon yesterday! I am running the Country Music Half Marathon in Nashville, TN on April 30th. Woohoo! I am super excited about this one and honestly I can’t believe that I’m actually doing another race of this distance. Never in my wildest dreams did I think I’d ever run one half marathon, let alone five. I’m really pumped about it though and I’m glad I have...

I Can Be Shy
I have been craving peanut butter as soon as I wake up for the last few days. Today’s craving was cured with peanut butter toast with a little ground flax sprinkled on top. Half a grapefruit drizzled with agave nectar. And a refreshing glass of knock-off emergen-c. I didn’t pack a lunch today because I knew we either had free lunch Friday at the office or that I’d go out for a bite with...

The Power of The Burrito
As Chipotle says it best, never underestimate the power of the burrito. And don’t you worry Chipotle, I never have and probably never will. Especially tonight! Tonight I was in desperate need of a burrito and if you had been around me you would have known it (sorry, Chris!). Chris and I usually go to the gym on Thursday nights, but tonight Chris had an idea for a workout at home. Not...

Rustic Pizza
Tonight was doubly great. We got our weekly CSA box AND made pizza! We got all sorts of good stuff including rainbow chard, broccoli, lettuce, oranges, a green bell pepper, potatoes, and some weird potato/root thing. What in the world is this thing?? The rainbow chard is really pretty this week. So much so that we used a little on our pizza tonight. Tonight we didn’t make any ole...

Proud
I’m proud for several reasons today. First, Moose ran two whole miles with me this morning! Normally he won’t go further than 1.3 to 1.5 miles, but today he had an extra pep in his step. Goooo Mooser! I am slowly trying to increase his distance. Unfortunately Moose can be very stubborn so when he wants to stop, he stops. And when he wants to go home, well we go home. Sorry, I guess he...

Greatest, Easiest Dinner
If Chris and I could eat Chili Cornbread Casserole for dinner every night we totally would. I guess technically we could eat it every night, but then you’d think we were weird. Plus I wouldn’t really have much to write about on my blog, would I? So although we don’t eat this casserole every single night, we love having it in our rotation. It’s not only a great treat, but it’s also so quick...

Second Attempt
Since yesterday’s rain scared Linda and I away from running, today we made a second attempt at running the six miles on our training schedule. Why did it have to go back to being cold though? It’s been reaching well into the mid-sixties for the past couple weeks but for our run today it decided to be really windy and in the low forties! What the?! Other than it being a tad bit chilly, we had...

Shopping Over Running
It’s been raining on and off all day. Linda and I had scheduled to run 6 miles this afternoon after checking the weather and seeing that things should be letting up about that time. Before heading out, I tweeted this: Sure enough it started raining as soon as I backed down the driveway. I continued on to our meeting point but the rain wasn’t letting up. Once we both arrived we decided...

Knock-Off Emergen-C
You know what I’m excited about? That it’s Friday! And that Chris and I are going out for Mexican food tonight. Mmm, I can’t wait to chow down on some chips and salsa. It feels like it’s been forever since we went to La Fonda. It’s actually only been 20 days but to us, that’s forever. First up, my day: My half marathon training schedule had me running 5 miles today. Moose and I woke up nice...

Secret Dinner
I incorporated last night’s Sweet Potato Soup leftovers into my oats for breakfast. I made overnight oats by combining uncooked rolled oats with the soup and a little almond milk. Those sat in the fridge all night just waiting for me to chow down this morning. To really top things off, a dollop of dark chocolate peanut butter was necessary. Since last night’s salad was so incredible I made...

Fresh CSA Dinner
Not long after picking up today’s CSA box, I got cooking. The box was another pretty one with lots of items we used for dinner tonight. The tomatoes are so red and pretty this week. And I got a grapefruit! I haven’t eaten one of these in probably over a year. I can’t wait to dig into it. The lettuce was so full and pretty that I had to make salad tonight. Lately Moore Farms and Friends...

Purely Decadent Indulgences
After running five miles this morning (the first 1.5 with Moose) I made myself a purely decadent smoothie for breakfast. In the mix: 1 frozen banana 1/3 cup frozen berries 1/2 cup coconut milk 1 tbsp chocolate protein powder (I used Vega Choc-a-lot shake & go smoothie) 1 tsp ground flaxseed For lunch I packed a big bowl of homemade vegetable soup (recipe to be posted soon) and a...

Veggie & Cheesy Whole Grain Pasta
It’s been an eerie day in Atlanta as we waited for severe thunderstorms to hit the city this afternoon. This next picture was right before the storm hit on my drive home from work. Less than five minutes later it was raining so hard I could barely see more than 10 feet in front of my car. After making it safely home it was time to get cooking. On tonight’s Meatless Monday menu was Veggie...

The Oscars and Pizza
Chris and I love our Kashi breakfasts and as usual began our morning with our cereal mixture. My bowl had Kashi Autumn Wheat, GoLean and Golden Goodness with a mix of almond and coconut milk. Before lunch we went to LA Fitness for a strength workout. Chris always plans our workouts and today he kicked my butt with a strenuous one! Luckily I had Chipotle to look forward to the whole time he...

All Sorts of Food
I feel like I ate all sorts of random food today, because well, I did. I started with a simple piece of peanut butter toast and blackberries for breakfast. It was good fuel before a five mile run. Usually I’m not hungry right after a run. I tend to need at least 30 minutes before my appetite is back to normal. Today however, I was ready for food the second I got home. I immediately snacked...

What I’m Loving This Week
A few things I have really enjoyed this week. Mostly food related because well, we all know I love to eat. 1. This delightful smoothie I made myself for breakfast after a 5 mile run. It had been quite a while since I made or, for that matter,  even drank a smoothie. So long in fact that this is the first appearance of a smoothie on Stacy Eats. I’m thinking there will be plenty more smoothie...

Sloppy Seitan Sauerkraut Sandwiches
Whoa there’s some alliteration. And a tongue twister. Say that 5 times fast, sloppy seitan sauerkraut sandwiches…Okay I give up, that was hard to even type let alone say out-loud! Girl Scout Cookies
Guess what I got today? Well if you read the title it’s probably not too hard to figure out. ;) Can you believe it’s time for Girl Scout Cookies?! Looks like Moose wants some Thin Mints. Girls Day Out
It’s Presidents Day and I had the day off work! I spent the day hanging out with my mom and sister. Before meeting them I went for a three mile run, taking Moose for the first 1.4 miles. Breakfast was a big bowl of cereal. Instead of just combining two Kashi cereals, I combined three! Golden Goodness is a new cereal from Kashi that I recently bought. Holy cereal combo! I met my mom and...

Great Weather & Karaoke
Saturday was all about enjoying the amazing weather that reached the 70s! Chris and I ran a few errands and then picked up pizza slices for lunch. Vegan Broccoli Cheese Soup
I have gotten so much broccoli from the last two weeks of the Moore Farms and Friends CSA boxes. I’m not complaining about all the broccoli because it’s one of my favorite vegetables. It’s just a little tricky in our house because Chris pretty much despises everything about broccoli. The other night I got an opportunity to make a broccoli dish all for myself  because Chris was hanging out with...

Interesting Facts →
adventuresingreen: When people ask you why you are a vegetarian or vegan… give them the facts. In the US, 64% of cropland produces feed for animals, while only 2% grows fruit and…

Sandwich Rounds
Have you heard of or tried these new sandwich rounds? I’ve been seeing them around the blog world so when I saw them yesterday at the grocery I decided to take a closer look. For lunch today I used my first sandwich round with sliced avocado and...

New Things
Whew, it has been quite a busy Saturday and I have thoroughly enjoyed it. As soon as I woke up this morning I made myself a good pre-run breakfast of peanut butter toast with apple slices. No-Bake Chocolate Goodness
I don’t know about you but I need some sort of chocolate every day. Yep. Every. Single. Day. Pretzel M&Ms are usually my go to food for fulfilling chocolate cravings. Free Food
Free food is hard to pass up. Maybe it’s just me, but I usually can’t say no to it. This becomes a big problem at my office. It seems like every single day there is leftover food from a meeting sitting around in the kitchen. And it’s not bad food lying around either, it’s usually from some hip/fancy place around town. As I walked into the kitchen today to heat up my stir-fry for lunch I ...
