2010 In Review
Since it’s the end of the year I put together a little recap of Stacy Eats in 2010.
Back in August I decided to join a CSA and start blogging about not only the CSA, but also about my adventures with food and fitness. I had become a full-on vegetarian (before I ate a little meat and loved seafood), cutting out all meat and seafood only a month prior to starting the blog. So I also wanted...

Pomegranates & Moose Munch Make the World Go Round
Pomegranates are just so good and we can’t stop adding loads of them to our breakfasts. Since we are going through them so quickly I had to peel another one before we could eat breakfast.
Pomegranates really are a strange fruit though and they take quite some time to peel. If you know of any secret pomegranate peeling techniques I’d love to hear them!! I usually just cut them down the...

More Painting
What we thought started as a one day project painting the bedroom has now turned into a three day project. Today we worked on painting the trim work and installing new hardware on the doors. These sound like easy tasks but because of sloppy work from the previous owners this was a fairly large project.
Before getting our day started I took Moose for a two mile walk. Once I got home I made Chris...

Painting the Day Away
Today’s focus was painting. We are in the process of decorating the master bedroom and today we started with…painting.
Here’s the bedroom before (those curtains were from the previous owners):
Actually even before we started painting, we started with getting rid of those hideous horrible not-our-taste curtains.
Okay so I keep lying…we didn’t start with paint...

Best Oatmeal Ever
Back to work I went today. Lucky for me though I only had to work one day this week, then I don’t go back until January 4th! Yeehaw!
To get a warm start to the day I made a bowl of oatmeal. First I cooked rolled oats with a little bit of water in the microwave. Then I poured in a little blue agave nectar, a sprinkle of chia seeds, a scoop of crunchy peanut butter and a handful of...

Christmas Day 2010
Christmas morning started out with a quick breakfast of leftover pancakes amongst the mess of the kitchen.
We loaded the car up with all the presents and headed to my parent’s house.
We stayed warm by the fire as the snow started coming down! It was the first time it snowed on Christmas in Atlanta since 1993 and supposedly the first time the snow stuck since 1882!!
It’s hard...

Flashback to Christmas Eve
We had a lovely Christmas Eve with Chris’ family. We started the night at church and then came home for a family dinner.
As always, Chris’ mom made a delicious meal. I filled my plate with sweet potatoes, black eyed peas, fried okra, roast vegetables, creamed corn, squash casserole, green bean casserole and a roll.
Then we opened lots of presents!
And enjoyed the fire.

Cooking on Christmas Eve
To kick off Christmas Eve I woke up and got to work on pancakes!
Winter pomegranate pancakes with maple syrup were served…along with one chocolate chip pancake in the mix.
Absolutely delicious.
Then I got to work on wrapping presents for Chris’ family. We are spending Christmas Eve with them this evening by going to church, having dinner and opening presents!
All of the...

Wine and Cheese Night
How appropriate is this bag? Every meal really does have a story, just like a picture can say a thousand words…
Last night after an awesome suggestion by Chris, we headed to Whole Foods to select an assortment of cheeses for our wine and cheese night. There was quite the array of cheese but we somehow narrowed it down to five (plus we already had leftover Gruyere from the Turnip-Parsnip...

Trying New Recipes
Do you try a lot of new recipes? I’d say I try new recipes fairly often. With all of the new and unusual vegetables I get from the weekly CSA box, I lean pretty heavily on ideas of others.
While searching for a recipe to use up the turnips from this past week’s CSA box I stumbled upon this Turnip-Parsnip Gratin recipe from Cooking Light. As soon as I saw that it was rated an...

Thieving Secret Santa Outcome
Last night we went to Malory and Cory’s Christmas party where we played the fun Thieving Secret Santa game (also called white elephant gift exchange). Basically everyone brings a present and one at a time participants either open a gift or steal a gift from someone else’s possession. I ended up going through three different gifts due to all of the stealing! In the end Chris and I...

Secret Santa
In just a few minutes Chris and I are heading to Malory and Cory’s house for a Christmas party. We are also bringing along our Secret Santa gifts for the evening…and of course some wine.
For an appetizer we are bringing brie cheese with a fruit jam on top. Now it doesn’t look like the prettiest thing (especially with my photography skills) but trust me, it is DELICIOUS!

Friday Off Work
After a bowl of cereal this morning I began writing my loooong to do list for my Friday off work.
Somehow more and more items keep getting added, it’s never-ending!
Since I didn’t have to be anywhere by any specific time today, Moose and I lallygagged around for a little bit before heading out for a two mile run.
Once we got home it was time for lunch. I was majorly craving salt,...

No Ice = Work
It’s nasty and cold here in Atlanta. Last night we were on the verge of an ice storm that ended up causing over 500 ice-related accidents around the city. Luckily the temperature rose above freezing today and melted all of the ice on the streets. Honestly I was kind of hoping the ice would stick around and the office would close. A lazy day not working and laying in bed sounded pretty great,...

BROCCOLI & More!
I love broccoli! And today I got my first head of broccoli from the Moore Farms and Friends CSA! The hardest part is deciding what to make with it. Do I make broccoli salad? Steamed broccoli? Roast it? Use it in salads? I haven’t quite decided what I will make, but I do know I get this entire head to myself since Chris hates broccoli…opposites attract, right?
On to the pictures of the...

Our First Christmas Tree
Last week Chris and I went out and bought our first Christmas tree together. A mix of busy schedules and a shortage of traditional white lights left our tree bare until Sunday.
Thanks to Chris’ mom finding lights and lending us some ornaments we now have a decorated tree!
Putting on the first ornaments.
Our pretty Christmas tree…
To complete our festive tree we still need a...

Crawling in the Crawl Space
It is so cold here in Atlanta! And it’s supposed to get down to a chilly 14 degrees tonight! This is practically unheard of for Atlanta, especially this early on in the Winter. Well to prepare for the cold, Chris needed to turn off the water to the outdoor pipes so that they don’t freeze overnight. That doesn’t sound all that hard, but it involved crawling under the house in a...

My Meals Lately
It’s been a while since I posted pictures of each meal I eat, so that is what I shall do right now. As you will see I have been eating out quite a bit lately because of a busy schedule. I do love having lots of events and things to do around the holidays but I haven’t had time to make a hearty home cooked meal. Maybe I can squeeze in some cooking tomorrow…
Starting with Friday’s lunch: a...

The New Table Needs A New Rug
So as if you haven’t already heard enough about the table and chairs Chris and I got at the antique market on Sunday, now I am going to talk about the rug we ordered to go along with it.
Basically we are in the process of decorating our breakfast nook. First we got the table and then yesterday we had a package waiting at the front door with a new colorful rug for the space.
Right away we...

More CSA Greens
CSA pickup day brought lots of greens. We have so many I don’t know what to do with them all!
The weekly mix from Moore Farms and Friends consists of spinach, arugula, a daikon radish, Asian salad turnips, apples, red Russian kale and unshelled pecans.
Doesn’t the daikon radish resemble a lobster?
I’m not sure what all I’m going to cook so if you have any...

Dinner at the Table
Most of our dinners used to be consumed on the living room couch in front of the TV. Now that we have a comfortable and functional kitchen table we can’t stop choosing the table over the couch! So here are our past couple of dinners enjoyed at…the new table, of course.
Yesterday we had a staple in our house: burgers and baked sweet potato fries (mine being a veggie burger and...

Our Antique Addition
Sunday morning started off great - I got to have brunch with some of my best friends from college.
I had the vegetable omelet with potatoes and an english muffin.
Chris and I had planned to get a Christmas tree over the weekend so not long after I got home from brunch we set out to find the perfect tree. On our way home from picking out a pretty six foot Douglas Fir from Lowe’s, we...

Saturday Morning With My Niece
This morning I got to hang out with my sister, my mom and my niece. Before heading out the door I had a quick breakfast of peanut butter toast and orange juice.
Us girls had a fun time hanging out and laughing at adorable baby Scarlett.
We also took Scarlett over to visit my grandparents. Afterward we stopped by Panera for lunch. I had a half veggie sandwich with tomato soup. I also snacked...

Chocolate Chip Cookie Pie
Alright so I have been taking a few breaks lately from posting, but I’m finally back home from my business trip. Hopefully now I can get caught up with work and back into the swing of working out and cooking. Did I mention that I haven’t gone for a run since the half marathon? I guess I should try and fix that soon.
Anyways on to a delicious dessert that you must try. Now I’m...

Working in Chicago
Yesterday I came up to Chicago for a few days of work related fun. It’s pretty cold up here and I don’t know that I was fully prepared for full on Winter, but it’s actually kind of fun. It was snowing as I walked to the office this morning, just in time for the first day of December!
You can’t really tell it’s snowing from the picture, but I tried to capture the...
