Happy Pi Day! It’s 3.14 and my inner nerd/fun date lover is really enjoying it. Why do I think it’s so cool when the date is interesting? Take for example my good friend Clare, her 21st birthday was 07-07-07! Not only are three 7’s in a row lucky, but 3×7=21 which was the age she was turning! Talk about cool.
Today started with some delicious oatmeal. It basically tasted like chocolate covered strawberries. Made my start to Monday a happy one. :)
In the mix that got microwaved:
- 1/3 cup rolled oats
- 1/3 cup water
- 1/4 cup almond milk
Then I topped it off with some ground flax, chopped fresh strawberries, dark chocolate peanut butter and coconut butter.
Lunch was leftover Easy Enchiladas that we made last night. I know it’s not the prettiest looking thing, but I can guarantee you that it tasted great.
And tonight for dinner we made bacon-cheddar-onion veggie burgers with sweet potato fries.
